Sunvil Supper Club - Fish Stew from Paxos

I love visiting Greece and its islands although I've only visited an handful but someday I'd love to visit Paxos.  The smallest of the Ionian islands, Paxos lies just south of Corfu and is only 7 miles long and 3 miles wide.  Although Paxos is literally covered with olive trees, it also has many wooded areas that are ideal for walking, and yet Paxos has over 30 beautiful beaches to choose from too.
 Fish stew from Paxos is this months recipe from the Sunvil Supper Club which they started a little while ago, designed to give you a taste of different country's cuisines.  You can download this and other recipes, so have a look and cook yourself into the holiday mood.  I think you'll agree, Paxos certainly looks beautiful.
The fish stew with sea bream, prawns, tomatoes, celery and potatoes was delicious.  Easy to make and perfect served with some nice crusty bread.

Vegetarian Stew with Potatoes Parsnip Swede and Chestnuts

 A really tasty stew of potatoes, swede, parsnip, carrots and onions cooked in a lovely rich Marsala sauce.  The addition of some fantastic smelling juniper berries really make this dish.  Roasted chestnuts are then added along with some mushrooms.  A perfect warming and filling vegetarian meal. 
Crusty bread is vital for dipping and mopping.
This is my titivated version of Nigel Slater's 'Hearty Party Hotpot' from his television series Simple Suppers.
Now, I used chicken stock, but of course vegetable stock is the way to go for any vegetarians out there.  I added potatoes to my version just to make it more of a meal.

Beef, Ale and Barley Stew with a Mustard Suet Crust

Just the thing for cold weather, a rich beef, ale and barley stew topped with a mustard suet crust. 
You could of course, easily make this into a pie - I was just trying to be fancy!

Spanish-style Chicken and Chorizo Stew with Peppers, Onions and Smoked Paprika

Marks and Spencer sell a fantastic range of ready prepared meals and they do a range called 'Cook'.  Last week I spied this Spanish-style chicken and chorizo stew with peppers, onions, smoked paprika and Arborio rice.
I bought one to give it a try, but with every intention of having a go at making it myself if we liked it - we loved it.


Be sure to use smoked paprika, or it won't taste the same.
