Easy Cheesy Chilli Pasta Bake - Leftover Recipe

When I make chilli con carne I always make too much, but not to fuss it doesn't get wasted.  Just pop any you have leftover into a nice clean tub and freeze.  When you want a quick dinner all you have to do it defrost and reheat, of course it must be piping hot.


Or you can do as I did, preheat your oven to 200C/400F or Gas 6
Cook some pasta in salted water as packet instructions - I used spiral shaped pasta but of course you can use whatever shape you fancy.  Drain the pasta and stir through your chilli.  Put the lot into an oven proof dish, top with a mixture Mozzarella and Cheddar and sprinkle over some paprika, cover with a lid or foil till it's heated through.  Remove the cover in the last 10 minutes or so till the cheese is golden and bubbling.  
Serve with a side salad and enjoy.

Mini Hot Cross Bun and Butter Puddings

Mini hot cross buns baked in a light fluffy egg custard, they not only look good they taste good too.
Should you happen to have any hot cross buns leftover, even if they are a little on the dry side, fear not!  In less than 30 minutes you can transform them into this rather nice dessert.
These are really easy to do, all you need is 4 ramekins or of course you could make one big one in a small dish.

Easy Leftover Turkey Curry - The Best Recipe

There are many different leftover turkey curry recipes but it has to be said my latest invention, in our opinion, is one of the best.  Great for using up leftover Turkey at Thanksgiving or of course Christmas.
Make a simple spice paste of onions, ginger, garlic and chillies.  Fry gently along with cumin, ground coriander, garam masala and throw in a cinnamon stick.  Add coconut milk, tomatoes and soft brown sugar and a little chicken stock and cook till done - continue reading for the full recipe.
Slightly sweet tasting yet very nicely spiced.  Of course you can make this with leftover chicken too.

Baked Eggs with Leftover Chilli and Tortilla Wraps

Ever made too much Chilli con Carne and then wondered what to do with the rest?  I always make too much and have come up with all manner of things to do with it!  
 You can stretch it out further by adding a few other tasty bits and bobs, such as tomato, spring onion, jalapeno peppers and cheese - you must have cheese!  This particular concoction of mine even uses up the odd tortilla wrap you might have floating about somewhere too!
Please note the serving dish you use must be able to go into the oven.

Christmas Turkey Curry - Easy Boxing Day Meal

With loads of leftover turkey from Christmas - what to do on Boxing day?  
Make a nice curry of course!
Nothing tricky, just a quick dinner ready in less than 30 minutes that looks good and tastes good too.  You can of course make this at any time during the year with leftover chicken from the Sunday roast.

Leftover Christmas Turkey Curry - MPW Recipe for Knorr

Marco Pierre White has come up with a lovely mild curry recipe using up any leftover Turkey you might have this Christmas.  This exclusive new recipe by Marco won't be available on the Knorr website until December, but I can share it with you now!
 Don't forget Marco has a great range of other recipes over at the Knorr Recipe page on their site. 
 Personally, I'm not a huge fan of fruity curries, but this one was actually really very nice indeed and all the fruit in it has to be good for you!  It's really easy to make and of course you can use leftover chicken if you wish.

Quesadillas made with left over Chilli con Carne

More economising going on here - I'm getting good at this!  As I had some Chilli con Carne left over the other week Quesadillas came to mind.  Of course it had been frozen once it was cold, popped it into a plastic tub and into the freezer it went.  
 So, you can either have the same dinner again a week or so later, only easier than the day you made the chilli. 
Or of course, you can think up something else to do with your left over chilli.
For anyone wondering they are pronounced kay-sah-dee-yah 
(simples)!
