Egyptian Spice Mix - Dukkah Recipe

Spices are AMAZING and are used in many dishes; of course just because the word spice is mentioned it doesn't mean your food has to taste spicy hot.  Think of Moroccan Tagine Recipes where a mix of delicious warming spices such as cinnamon and sweet paprika are used along with honey to create easy mouthwatering, one-pot meals that are a delight to eat.  Meat or chicken cooked in a Tagine is really tender and the aroma when cooking is just fantastic.

Dukkah (pronounced Doo-kah), is an aromatic blend of seeds, spices and nuts; it originates from Egypt and can be sprinkled on all sorts of dishes.  It's also delicious served alongside a small bowl of really good olive oil and some nice bread.  Just dip the bread in the oil and then in the Dukkah. Impress your guests at a dinner party by serving it as a very simple but different starter course - you could add small bowls of olives to nibble on too.

There are many, many variations of Dukkah recipes.  The basic recipe is a mixture of nuts and seeds long with dried herbs such as mint or for more heat you can add Baharat or Ras el Hanout; go with whatever takes your fancy.

Chocolate Chip Muffins - Hard Anodised Bakeware from Stellar Cookware

As you probably know I'm not usually a one for baking cakes; why?  Simply because I can't do baking, I am useless at it and so I need all the help I can get.  But with that said I did once excel myself in making Dulce de Leche Filled Muffins 😉


Of course a good muffin/cupcake tin will ensure your muffins cook evenly and this Hard Anodised Cupcake Tin from Stellar Cookware is the very thing.  It doesn't warp like some cheaper muffins tins will.  This tin is a sturdy and professional piece of bakeware (and by the way it makes a good job of Yorkshire puddings too).  I'm really pleased with the results which means me and this Stellar cupcake tin are now best buddies in the kitchen.


The tin holds twelve muffins but my recipe only made ten; and in case you are wondering, by the time I took the top picture, Paul (the husband) had already eaten two - what is he like?

When adding chocolate chips or raisins and the like, to any cake mix add them to the flour and mix to coat before adding the wet ingredients; this stops them sinking to the bottom of your muffins. Marvelous!

Spicy Fried Eggs on Ciabatta - Stellar Cookware Chef's Pan

Just about everyone's into cooking these days; magazines are full of recipes and the television is pretty much non-stop cooking shows; which as far as I'm concerned can only be a good thing.  Everyone has to eat, but few people want to spend hours in the kitchen.

Fast food is what we all need after a busy day, something that can be rustled up in next to no time, tastes good and looks good.  So if it can be made using just one pan, surely that's even better?  My Spicy Fried Eggs take under 10 minutes to make including the prep!

Not many people want to spend a fortune on fancy pot and pans either, but it has to be said a good pan will make all the difference to your cooking results.

House of Fraser - Tefal Ingenio Frypan Review

Spring and summer 2016 sees a fantastic range of kitchen cookware and accessories available in House of Fraser; in fact they have all the kitchen essentials you should be buying.

I love cooking and I do a lot of it!  One thing I can't live without in my kitchen is a good frying pan and I particularly like this 30cm Tefal Ingenio Frypan.  Even if you're not so into cooking as much as I am, a good non-stick frying pan will make your life so much easier.  Also available in 28cm size and there's a gorgeous set of saucepans in the range too, all available in House of Fraser.

Suitable for all heat sources except induction and can be used in the oven (without the lid) up to a maximum temperature of 250C/ 475F 

The handle which is sold separately, simply clicks on or off at the press of a button.  The pan is so good looking it's brilliant for taking straight to the table.  By the way, Tefal do have pans in the Ingenio range that are suitable for induction hobs.

Chocolate Chip Cookies - Panasonic Steam Combination Microwave

Having had the Panasonic NN-CS894S Steam Combination Microwave for a few months now I've been busy trying out it's many functions.  I'm totally impressed with this oven; whether you are using it for steaming, as a convection oven, microwave, grill or a combination of these, or simply to defrost frozen food, this oven is fantastic.   When I made my Cheesy Topped Potatoes and Peppers I used the steam function to cook the potatoes followed by the conventional oven and grill.

When used it as a convectional oven as I did to make these cookies you can see it cooks evenly too.

In fact I'll go as far as to say it's pretty much faultless. When used in steam only mode it's true the oven walls do get wet, but all is needed is a quick wipe to get it dry again.  You can read my review to find out more about this oven and it's features.
I have made so many things in it including bread rolls to which I added a shoot of steam during cooking and they were lovely and soft on the inside and perfectly cooked.

Lemon and Thyme Homemade Butter - How to Make

Okay yes I know homemade butter has been done a million times before now by other people, but I'm quite pleased with myself having finally got round to making butter all by myself......oh and with a little help from my ThermoCook of course.


So, Paul (the husband) came home from work and as soon as he walked through the door........

Buut it turns out he was actually impressed - just shocked since he thought it was a long job and wondered why I'd bothered with such a thing!
 
Anyway, read on and I'll tell you how much buttermilk you actually get from 300ml of double cream.  Yes buttermilk, so this really is two recipes in one.

You don't have to have a ThermoCook in order to make butter but it really is one excellent piece of kitchen equipment that I use almost daily for something or other.

Vegetarian Stew with Peppers and Cannellini Beans - ThermoCook Recipe

An easy to make, vibrant vegetable stew packed full of flavour.  The addition of cannellini beans makes this a filling meal especially if served fresh crusty bread for dipping and mopping.   Of course you don't have to own a ThermoCook to make this recipe, but it does make it extra simple to make and really does cook stews perfectly.


All stews taste even better if reheated to following day making this the perfect quick mid week meal or to take to work for a tasty lunch; just heat it up in a microwave.
Of course the ThermoCook can chop everything but since we want chunks of vegetables rather than finely chopped for this recipe it's better to cut them by hand.

Review - Panasonic Steam Combination Microwave NN-CS894S

I'm super excited to have been asked to review the Panasonic NN-CS894S Combination Steam Microwave Oven.  Oh yes, this is one very stylish, family sized microwave oven with Microwave, Convection, Grill and Steam functions.  I've used this oven many times over Christmas and New Year more than any other combination oven I've ever had; I truly love it.  I found it fantastic for entertaining as it means I effectively have the space of two ovens when used along with my main oven.


Flatbed means no turntable:
In my opinion this is far better than the usual turntable as the large flatbed gives you a much larger cooking space and also means you can cook two dishes at the same time since there are 3 shelf positions plus you can use the base of the oven too.  There's none of the usual bother when you want to use your own dishes and find they are too large to turn around on the turntable since it doesn't have one!

Optimum ThermoCook - Mini Review

Thanks to ThermoCook it's beginning to look like I'm redundant in my own kitchen!  Let me tell you about this truly amazing piece of kit; introducing the Optimum ThermoCook Professional Cooking Assistant!  When I was asked if I'd like a ThermoCook all of my own I almost fell off the chair; I mean this is  seriously an excellent state of the art piece of kitchen equipment.  It's not only stylish but it's smaller than I imagined it to be, which is great since our kitchen is really tiny.

Oh yes, the ThermoCook is a cooking lovers dream come true.  Of course it's not that I or anyone else can't cook, but the ThermoCook makes everything so much easier. 



There's so much I have to tell you but it would mean this post would go on forever, so I intend to write a series of posts covering the many different tasks the ThermoCook can do.

How to Make - Leek Brie and Bacon Quiche using a Pie Maker

Regular readers will know all about my amazing, life changing pie maker from Judge Cookware! 
Now, my first attempt at quiche wasn't brilliant as the filling didn't cook enough while the pastry was getting a little too done for my liking.  Well I've been experimenting and after a couple of attempts, I think you'll agree I've now perfected quiche. 


Of course you can use Cheddar cheese if you don't like Brie.  I just happened to have some in my fridge left over from my Moroccan dinner party the weekend before; and yes I know Brie isn't in any way very Moroccan, but after dessert we ended our meal with cheese and biscuits.

Apple Pie with Rum Soaked Sultanas - Judge Cookware Electric Pie Maker Review

Everyone likes a good pie whether it's sweet or savory.  New in my kitchen is this Electric Pie Maker from Judge Cookware and I have to say I'm seriously loving it.  In a word it's brilliant; the pastry cooks perfectly and the deep fill pie moulds allow for 'proper' good and filling pies to be cooked in just 15 minutes once you have the filling ready.

SuperFast Thermapen 4 vs Classic Thermapen - Review

It has to be said I do have a lot of fancy kitchen gadgets, but the one thing I couldn't be without is my Thermapen probe thermometer.  It gets used in my kitchen pretty much every single day and without meaning to sound like an advert, I really do love the Thermapen and can't recommend them enough. 


I believed there wasn't anything that could be improved on (until I recently received the new SuperFast Thermapen 4) which has an automatic 360° rotational display meaning it's is readable whether you are left or right handed which is fantastic.

Strawberry Blueberry and Apple Vitamin Drink - Sage by Heston Nutri Juicer

Codlo Space Saver Sous Vide - Perfect Poached Egg

Sous vide cooking is a fantastic, foolproof method of cooking and it has to be said although I love my Sous Vide Supreme machine which currently sells for £310 it is a bit on the expensive side.  Also it's quite big and takes up space in the kitchen; it's almost the size of a small microwave.
