Vegetable Pasta Bake Recipe - No Need to Cook Pasta First!

This colourful comforting vegetable pasta dish was on the table ready to dive into in under 20 minutes; and that includes preparation.  And it was all cooked in ONE pot with no draining or need for another pan to saute the veg first, or even to cook the pasta first; bet you wouldn't believe me? As part of my healthy eating plan and to lose a bit of weight for the #Jumpstart17 challenge I said I would have at least one meat free day per week.

You may have read my review of the Optimum Pressure Cooker PRO - with this fantastic piece of kitchen kit you do not need to cook the pasta first; just add dry pasta straight from the packet! 
I mean how fantastic is that?

Think how much time and washing up you save on, not to mention the mess of pots and pans everywhere.
  • I sauteed the chopped vegetables directly in the pan of the Pressure Cooker Pro.
  • I then added in a tin of tomatoes, plus herbs and seasoning along with 300 ml vegetable stock.
  • Add the dry pasta straight from the packet and pressed 'PASTA' setting.
  • 12 minutes later it was DONE and ready to serve!

Optimum Pressure Cooker PRO with Induction Technology - Review

I am soooo excited to tell you about the Optimum Induction Pressure Cooker PRO from Froothie! Oh my goodness, you know how I love a good kitchen gadget?  Well this machine is just the best. It's time saving, money saving and delivers great results.  I'm going to be cooking up some healthy recipes as I'm taking part in #Jumpstart17 in my bid to lose a bit of weight.

Oh yes this electric Pressure Cooker AND Slow Cooker is one super-duper amazing piece of kitchen kit.  With 16 set functions it really does make cooking pretty much fool proof.

It also uses Induction heating technology.  Induction is a method of heat transfer, induction heating generates an electric current to create a magnetic field that transfers heat to a cooking vessel.  It is more energy efficient than standard heating technologies, such as electrical cookers, and cooks food more evenly - pretty cool ah?

This multi-cooker has automatic pressure release and voice warning when pressure is about to be released.  It also has handy delay start and keep warm functions.
































So what can this mean machine actually do?
Well along with 7 pressure levels and Slow Cook, Meat, White Rice, Stew, Soup, Porridge, Steam, Braise, Cake, Pizza, Pasta, Roast, Deep Fry, Defrost, Yogurt, Simmer and DIY functions this really is one very versatile machine.  So it's not just a fancy Pressure Cooker; because it's a Multi-Cooker it means is can also be used as a Slow Cooker, Rice Cooker, Steamer and even a Deep Fryer too.

Healthy Diet - Lose Weight - Lets's do this Together

Yes, yes, after the all the festivities pretty much everyone in January announces they're on a diet, joining a gym and are going to get fit and healthy.  Trouble is come February most of us, including myself, kind of forgets about it and go back to our usual eating habits.  But this time I really mean it; I will lose weight and I will eat more healthily - together we can do this!

I'm excited to take part in Jumpstart January and I'll be featuring healthy recipes a review and a rather special giveaway which will all based around healthy eating.

As I'm going to be sharing my progress with you, I hope to hear how you're doing too so please leave a comment below.  Of course I appreciate that not everyone needs to lose weight; but even if it's just to get fitter which means you will have more energy, eating healthier can only be a good thing.  For me, I really do need to loose 9lb in order to get back to how I used to be.

Losing weight isn't all about smoothies and hardly eating; if it was I'd fail miserably!

Carrot and Ginger Soup - Made using the Optimum 9200 Power Blender

When reading the Optimum 9200 Next Generation Power Blender could make hot soup by friction heat alone (caused by the fast spinning blades) my thinking was it would be lukewarm at best.  As it turns out I was wrong. 























Running on high speed the blades rotate 44,000 rpm which creates friction heat and the Optimum 9200 will raise the contents of the jug by 4 degrees every 30 seconds.  In order to make hot soup it has to be running for approximately 5 to 6 minutes depending on the amount of vegetables in the jug.

To make 2-3 bowls of soup you will need:
4 large carrots - peeled and cut into chunks
1 drop of Holy Lama ginger extract spice drops
100ml of vegetable stock made from half of a Knorr stock cube dissolved in boiling water (you can use chicken stock if you're not vegetarian)
a small pinch of sea salt and black pepper to taste

How to do it:
Throw the peeled and chopped carrots along with just 1 drop of Holy Lama Ginger Extract Spice Drops into your Optimum 9200 Power Blender and blend on high for about 30 seconds - you will need to use the tamper tool just so they don't get stuck.  Now add about 50ml of the hot stock.  Remove the tamper tool and pop on the lid.  Leave to blend for 5 to 6 minutes. 
Check the consistency and add more of the stock if you think it needs it.  Your soup should be nice and hot and ready to serve.  Have a taste and adjust the seasoning.
