Chicken with Parma Ham and Goats Cheese

Simple to make and good to eat.  Lovely moist chicken with a slight saltiness from the Parma ham but also a bit tangy from the goats cheese - what's not to like?
Arm yourself with a shallow baking tray or one of those amazing tin foil trays which are disposable but you can re-use them as I do.  Just pop into a dishwasher or soak over night.  Okay, they go a funny colour but it's all okay.

Chicken Bouillabaisse Recipe

Chicken and potatoes cooked in a rich sweet garlic and tomato sauce along with saffron, Pernod, white wine, fennel seeds and rosemary.  Totally delicious and easy to make too as it's all cooked in one pot. 
 Oh yes this is now in my top five dinners of all dinners and has to be made again soon.
After seeing Ina Garten cook this the other night the Food Network TV show 'Back to Basics', it had to made there and then.
I believe this is usually made with fish and served with rouille (garlicky mayonnaise).  Because of my rush to make it I didn't have enough garlic to make the roullie so just served it with nice crusty bread.
According to Wikipedia, Bouillabaisse is a traditional Provençal fish stew originating from the port city of Marseille.

Chilli Beef Lettuce Wraps - Finger Food at it's Best

Who's been watching Gordon Ramsay's Ultimate Cookery Course?  Weeknights on Channel 4 at 5pm?  A fantastic show!  Everything he's made so far I want to make too.
  Spicy chilli beef served wrapped in gem lettuce with a lovely dipping sauce.
 Absolutely delicious and very easy to make - finger food at it's best.

Picadillo - Mexican Fruity Chilli

Okay I know this sounds a bit odd, regular chilli made with the usual minced meat, but with the addition of banana, apples and raisins?..... 
 However, if you saw Thomasina Miers cooking this on her TV series 'Mexican Food made Simple' on Channel 5 then I'm pretty sure you'd want to make it too.  It was totally delicious, very hot but the heat is nicely balanced with the sweetness from the raisins.  Yes I will make this again and again.

Marinated Peppers - Healthy and Delicious

 Did you know a large red pepper contains three times more vitamin C than an orange?  In fact peppers in general contain three times more Vitamin C than oranges and other citrus fruit.  A red pepper contains twice the Vitamin C of a green one, and ten times the Vitamin A.  How marvelous!
Now, there's nothing quite as nice as a roasted or grilled blackened pepper - not only does it make them easy to peel but it brings out their natural sweetness and they taste amazing.
If you've never tried this get roasting or grilling and have a go at making marinated peppers.  Great with some lovely warm fresh crusty bread.

Spaghetti with Chicken Chorizo and Sun-dried Tomatoes

Along the lines of my Linguini with Prawns and Chorizo and just as yummy!  Not only is this pasta recipe easy to make, it looks good too.
 It's a fact of life that chicken and chorizo are a great combo anyway.  Add sun-dried tomatoes along with a bit of chilli for heat, throw in a few peas for colour and you have one delicious meal in no time at all.

Crispy Parmesan Crumbed Chicken Caesar Salad

Classic Chicken Caesar salad is yummy, but I wanted something a bit different.  So with that in mind I coated the chicken in a crispy Parmesan crumb and that did it, it became something truly wonderful indeed.
 You can read my previous post on how to make the Perfect Salad Dressing.

 Now, I know that to most (myself included) anchovies aren't the nicest thing in the world to eat.  But of course you can't make Caesar dressing without them and as they're so finely chopped up you wouldn't notice them apart from they are vital to the taste of a Caesar dressing so you can not leave them out!

Sweet Chilli Pork Patties and Mincing your own Meat!

This recipe came about as a result of trying out my shiny new Multi-function mincer by Judge.  I had to mince something to test it out and as pork came to mind - sweet chilli pork patties had to happen. 
    I never buy prepacked ready made burgers because you just don't know what you're going to get.  I always buy good quality mince but it has to be said there's nothing better than to mince your own meat so you know exactly what you're eating!

 To make 6 to 8 small patties you will need:
a glug of vegetable oil for frying
360g minced pork (approx 3 pork loin steaks)
3 spring onions - chopped
1 red chilli pepper - de-seeded and finely chopped
2 nice fat cloves of garlic - finely chopped
1 egg - yolk only and free range of course
2 teaspoons of Mirin - Japanese sort of sweet rice wine
2 teaspoons of Ketjap Manis - Indonesian sweet soy
salt and black pepper to season

How to do it:
Chop your ingredients and either mince your pork loin steaks in the Judge Mincer (after removing all the fat) or use ready minced pork with a low fat content.
Put the mince into a bowl along with the spring onions, chilli, garlic, egg yolk, Mirin and Ketjap Manis along with a good pinch of salt and black pepper.
Mix together well but don't over mix or the mixture will become 'over processed' and look quite horrid.

Shape into 6 or 7 small patties or of course 2 nice fat burgers - whichever takes your fancy.
Heat up a frying pan large enough to cook them all at the same time.
You can fry a tiny amount of the mixture and have a taste to check the seasoning if you wish.
Fry the patties until they're nicely cooked through.  The exact time of course will depend on how big you make them, so I'll leave that to you to decide.
Whatever, don't over cook as there isn't any fat they will soon end up dry.
I served my patties in warm pitta bread with salad and skinny chips.

 Well here's the mincer by Judge:
This easy to use hand powered rotary mincer by Judge has steel mincing plates giving you the choice of course and fine.  It also comes with a four-shape cookie press.

It is relatively easy to clean although the mincer isn't dishwasher safe and so personally I'd recommend using an antibacterial spray after washing and before rinsing again.

 And on to the test:
The mincer was easy to assemble. There's a clamp to hold the mincer in place whilst in use.  It will stick to many different work surfaces - I tried wood and that worked too.
 However, I found the rubber suction doesn't work for more than a minute or so without making the rubber bottom damp and the instructions didn't mention that.  Paul the husband that never ever cooks a thing, said it was obvious to him that you would need to make it damp.....Okay, well he was correct and the problem was remedied in a second!
Once the rubber bottom was made damp by wiping with a cloth the mincer wasn't moving for anyone until you released it by the clamp of course.
Ten out of ten for good grip!

And now the mincing:
 Too easy to use - cut your choice of meat into cubes trimming off any fat and pop into the top along with the plunger thingy.  This was one of the pork loin steaks I used to make the patties.   
Attach the handle, and away you go.
 Make pork patties knowing you're eating only good things.

How to Make Huevos Rancheros - Eggs Mexican-Style

Eggs cooked in a spicy Mexican style tomato, pepper and bean chilli mixture served in individual bowls.  Up to the point before adding the eggs you can make these earlier the same day - ideal if you have guests coming.
 Huevos Rancheros is a classic Mexican breakfast dish of which there are many different versions - this is my experiment but it worked!
 Crispy crunchy tortillas for dipping and a dollop of soured cream is all that's needed.

Camembert Baked in the Box with Bacon Dust

Melty, sticky, gooey cheese that oozes from its box and topped with bacon dust.  Ready in no time and all that's needed is fresh crusty bread and you're all set to dive in. 
With some bacon in the fridge in need of being used up what to do but make bacon dust!
  Having had a bit of a Google I think I just might have invented this as there seems to be no other baked Camembert with bacon dust recipes to be found.

No Bake - White Chocolate and Raspberry Cheesecake

Easy no bake mini cheesecakes.  After the success of my Tiny Toblerone Cheesecakes, I had a go at white chocolate and raspberry as I love the combo and besides, raspberries always look nice in any dessert. 
Of course this recipe can be adapted to make one big cheesecake - see the different print options below.
You can use fresh or defrosted frozen raspberries for this.
I love the swirly pattern the raspberries make.

Foil Baked Salmon and King Prawns with Chilli and Lime Butter

Another of my 'make it up as I go along' easy to cook salmon recipes.  Just bake the salmon in a foil parcel.  Add a few King Prawns and some other bits and bobs with lime zest and a squeeze of the juice along with a knob of butter.  Done and ready to eat in 20 minutes! 
Now that can't be bad can it?!

How to Make - The Best Fondant Potatoes

Fondant potatoes are much easier to make than you might think.
Perfect for that special Valentine's Meal or Dinner Party and are a lovely change from an ordinary cooked potato.
 Serve with a nice Fillet Steak with a Blackberry and Port sauce, Chantenay carrots and green beans - then you can invite me to dinner!
Crispy on top yet soft underneath from the Chicken stock they were cooked in.

Vegetables in Chinese Brown Sauce - Just like the Takeaway!

Baby Pak choi, Bean-sprouts, Skitaki mushrooms, Carrots and Spring onion cooked in a tasty Chinese style sauce.  After much experimenting, I think I've finally cracked the recipe!  This sauce tastes just like the sauce in the dish called 'Happy Families' you get from a Chinese takeaway. 
'Happy Families' is a dish that usually has a bit of everything in it, so there's something for everyone to like keeping the whole family happy! 
So very simple to make and I'm thinking this has to be healthy and I can't see where the calories in this dish would be.   I suggest you serve with some nice egg fried rice to add a few calories to your meal!

Chocolate Ice Cream Bombe - Dessert

Chocolate lovers will just love this dessert - rich chocolate ice cream encased in slices of chocolate Swiss roll and topped with even more chocolate!
   It's really, really easy to make too - continue reading for my step by step picture instructions! 
 So the next time you have people round for dinner, it's well worth giving this a go.

Balsamic Glazed Beetroot and Carrots - Marks and Spencer Christmas Food

Another fantastic idea from Marks and Spencer this Christmas!  Beetroot and Chantenay Carrots roasted with a Balsamic and Honey Glaze.   Of course, as soon as I spied them I had to have a go at making them myself.
 Just a few minutes to mix up a bit of Balsamic vinegar, honey and a couple of other bits and bobs.  Minimal preparation - just throw the vegetables into a foil tray and your ready to roast.  
 Add the glaze towards to end of cooking - what could be simpler?......
Apart from popping down to your local Marks and Spencer of course!

Bacon Wrapped Chicken with Goats Cheese - Recipe

Oozy goats cheese dripping down bacon wrapped chicken makes for a seriously good meal.  Serve with crispy garlic and lemon roast potatoes (link to my recipe below) or of course, whatever else you fancy.
 Very easy to do and can be prepared in advance, wrapped in cling film and stored in the fridge ready to cook later.

Apple Strudel - Marks and Spencer Copycat Recipe

Almost everyone in the UK will have seen the Marks and Spencer advert for their apple strudel on television and I think nearly everyone has tried one!
 Although I'm not one for desserts (I'd rather have two dinners personally) I had a go at making it myself.  
Now I'm so not into pastry or baking but the result (although it didn't quite look like the M&S one) tasted GOOD said Paul the husband!

Quesadillas made with left over Chilli con Carne

More economising going on here - I'm getting good at this!  As I had some Chilli con Carne left over the other week Quesadillas came to mind.  Of course it had been frozen once it was cold, popped it into a plastic tub and into the freezer it went.  
 So, you can either have the same dinner again a week or so later, only easier than the day you made the chilli. 
Or of course, you can think up something else to do with your left over chilli.
For anyone wondering they are pronounced kay-sah-dee-yah 
(simples)!

Pan-fried Chicken with Indian Style Flavoured Butter

Oooh now this was yummy - Pan-fried chicken with Indian style flavoured butter. 
After making Banita's Indian Style Fish and Chips the other day, we loved her Tandoori butter!  So, I titivated it a bit and came up with Indian style flavoured butter.
Perfect for chicken, fish or whatever else takes your fancy!
