Coffee Caramel and Hazelnut Poke Cake

Poke cake is so called because once it's baked you simply poke holes in it!  Then you pour a delicious runny topping into the holes; and when the cake is fully finished you can't see the holes as they are covered with more topping.  Then when you cut it, everyone gets to see the scrummy gooey filling in every slice.

See what I mean - sticky, gooey caramel oozing from the cake and of course the more holes you make the more filling there will be; but with that said don't go too mad or the cake might fall apart!

Just recently the lovely people over at Spiller and Tait sent me some of their freshly roasted coffee to try.  When the delivery guy arrived at the door you could really smell the lovely aroma of coffee; he even said, no guessing what's in this parcel!

On opening the lovely smelling parcel I was amazed to see on the packets the day of roasting (might be just me but I've never seen this before), anyway this coffee was fresh, it was roasted no more than 7 days ago. The secret to good coffee is it should be fresh and apparently Spiller and Tait only roast weekly in small batches so every packet you buy from their website arrives to you with full flavour and aroma.

New from Mövenpick - Passion Fruit and Mango Sorbet

I'm excited to tell you about a couple of new additions to the Mövenpick range.  The Passion Fruit & Mango Sorbet is so refreshing and has a nice tang but without being too sharp as it's nicely balanced with mango for a little sweetness.

The passion fruit puree from Ecuador makes this wonderfully a smooth sorbet; mixed with the flesh of Alfonso mangoes from India.  The fruit content is 42.5% so yes it's really nice and fruity with a good helping of mango pieces in every spoonful.

Now the plan had been for us to try another new flavour from Mövenpick, Tiramisu Ice Cream.  But it turns out it's so popular there wasn't any available!   So next up we tried the Maple Walnut Ice Cream which isn't a new flavour in the Mövenpick range but in my opinion this is absolutely the best ice cream ever!  Made with genuine Canadian Maple Syrup with Caramelised Walnuts which adds a lovely sweetness and a bit of crunch; oh yes this is good stuff.

Cherry Ice Cream Sundae - Served in a Margarita Glass

Hands up who likes Ice cream?
Hands up who likes Cherries?  Okay, I bet that's pretty much everyone!

Cherry and Vanilla Ice cream served with fresh Cherries surely has to be the best.  Of course if you then add pieces of crumbled Meringue and a good dollop of whipped Cream, top the lot with Cherry Sauce you end up with something really quite special.

Presentation of your ice cream sundae doesn't really matter since it will still taste the same whatever you serve it in.  But of course it's no secret that we eat with our eyes so to speak, therefore these gorgeous Margarita Glasses from House of Fraser really do turn a simple looking dessert into a beautiful thing.

Margarita glasses are of course perfect for serving Margaritas; not only are they absolutely gorgeous to look but are perfect of other cocktails too; and of course making a simple dessert look extra special.

These glasses dishwasher safe but hand washing is recommended; personally I wont be putting them in my dishwasher since it takes little effort to get them sparkling clean after use.  They're a nice size too which means you get a good sized Cocktail or a decent size dessert; no short measures!

Boozy Tiramisu Recipe

Coffee comes in many different varieties ranging from weak to strong in taste such as espresso.  I say espresso is for proper die hard coffee lovers since it is very strong, personally as a drink it’s too strong for my liking.  But with that said there are many recipes in which espresso can be used and nothing but espresso will do.

Have you ever tried making your own coffee ice cream or granita?  Coffee granita (a semi-frozen dessert made from sugar and coffee) is another favorite of mine as it is so cooling and really refreshing on a hot day.

Then there's Tiramisu; I really like the bitter-sweet taste of the coffee soaked sponge topped with sweetened Mascarpone.  By the way there's no cooking involved, it's pretty much effortless to make and can also be made in advance making it the perfect dinner party dessert.

Tiramisu needs to be made with strong coffee and so espresso is perfect.  Of course like most people that are into coffee we have a coffee machine to get the perfect espresso.  Paul (the husband) is a true coffee lover but the pods are so expensive it kinda gets out of hand keeping up with the cost!

Toblerone Custard Fondue

Everyone loves Toblerone and most people love custard, so what can be better then Toblerone Custard?  Answer: a Fondue filled with hot Toblerone Custard Sauce that's what!

Add bananas and marshmallows for dipping and you have the perfect Chocolate Lovers sharing dessert.  Yes you do have to share! 


The nice people over at Toblerone asked me to come up with a fondue recipe that included Toblerone. So armed with the rather nice Fondue set they sent me along with lovely bars of Toblerone, into the kitchen I went and came up with Toblerone Custard.

No Bake Limoncello Cheesecake

No bake cheesecakes are really easy to make.  As long as you leave enough time to chill the base in the fridge (so it can firm up) your cheesecake won't fall apart.  With that in mind depending when you are planning to serve it, you might be best doing that bit the day before.
It's also important to use enough butter when making the biscuit crumb base since it's the butter that holds the crumbs together. 

Limoncello

My easy to make cheesecake is perfectly balanced; not too sweet and although it's nice and lemony, it's not too tart either.

Limoncello is an Italian liqueur at around 26% Vol which has become very popular outside of Italy; it's quite sweet and very lemony and works well in this dessert.

Apple Pie with Rum Soaked Sultanas - Judge Cookware Electric Pie Maker Review

Everyone likes a good pie whether it's sweet or savory.  New in my kitchen is this Electric Pie Maker from Judge Cookware and I have to say I'm seriously loving it.  In a word it's brilliant; the pastry cooks perfectly and the deep fill pie moulds allow for 'proper' good and filling pies to be cooked in just 15 minutes once you have the filling ready.

Far quicker than waiting for the oven to heat up, so in a way this is also a money saving gadget too!

BBQ Mojito Lime Pineapple - Schwartz Grill Mates

Schwartz have a great range of marinades to liven up BBQ food, or of course since the British weather can not be relied upon, any BBQ-style indoor meal.  There are altogether 23 products that make up the Grill Mates range.

For this recipe I used Mojito Lime Marinade packet mix consisting of delicious dried spices; all you need to do is add a couple of ingredients as listed on the back of each pack, then simply mix together to use.


Grill Mates are really are easy to prepare and although they're kind of meant to be a marinade for meat and poultry, I came up with this idea of using the Mojito Lime Grill Mates to marinate slices of fresh pineapple.

So easy to make; just marinade the pineapple slices before popping them onto the BBQ (or in my case a griddle pan) as the weather was nice, but certainly not amazing. 

*Please note for this recipe I didn't follow the back of the packet - instead I altered the 'extra' ingredients needed to suit my BBQ Mojito Pineapple creation!

To serve 4 you will need;
1 large fresh pineapple - cored, peeled and cut into thickish slices
1 packet of Grill Mates Mojito Lime
1 tablespoon olive oil
50ml dark rum
2 tablespoons of molasses

How to do it;
In a small bowl mix together the whole packet of Mojito Lime Grill Mates along with the olive oil, dark rum and molasses and mix well.

Put the sliced pineapple onto a plate and pour over the marinade, turning the pineapple to coat. Keep the marinade to baste during cooking.  Pop the pineapple slices onto a really hot griddle pan (or BBQ) and cook for a minute or so.  Baste and turn to get those nice grill marks, cook for another minute before serving with some nice vanilla ice cream.

Orange Flavoured Pancakes with Chocolate Sauce and Caramelised Orange Slices

With Pancake day just around the corner, now's the time to get creative in the kitchen and serve up something other than the normal everyday kind of pancake.  Come on, get cooking!  That said, personally I actually like and prefer pancakes with a just sprinkle of sugar and a good squeeze of lemon - I'm easily pleased!

First job is to get yourself a good decent non-stick frying pan that's up to the job. This rather nice looking frying pan from Judge Cookware Continental range is the very fellow.  This pan heats up quickly making it perfect for pancakes.  Of course this frying pan isn't only for pancakes. Great for everyday use and perfect for that Saturday morning bacon sandwich or a good fry up.

Summer Berry Oat Crumble using Sweet Heart Collection Stoneware

Premier Housewares have just launched The Sweet Heart Collection of stoneware.  Now these stoneware dishes are beautiful.  Pretty, homey and a bit mumsie if you know what I mean.
The 'oven to table' range consists of all the baking essentials and is just perfect for berry crumble or big cottage pie.

This 1.4 Litre Oval stoneware dish (W31 x D19 x H7cm) approx.  It's dishwasher and microwave safe and is available in green or pink.  It washed up nicely without the need to go in the dishwasher.

Crème Brûlée - Tefal Cook4Me

Yes I'm still raving on about the Tefal Cook4Me!  Over the weekend I thought I'd try one of the desserts.  Since I'd recently been given a cook's blowtorch to review I wanted an excuse to play with it!  My review of that will of course be in a separate post. 

Creme Brulee

Crème brûlée in the Cook4Me was a doddle to make and turned it out perfectly.  I must point out the recipe instructions are a little odd as they say to serve 2 people you will need 3 ramekins - then again Paul (the husband) would agree with that meaning there's one more for him!

Banana Caramel and Chocolate Dessert Pizza

The Italian Restaurant Zizzi recently set me a challenge to create a dessert pizza or any savoury dish that could be turned sweet.  I first came up with a possible of a Cinnamon and Caramelised Apple Lasagne but sadly although it tasted okay it wasn't somehow quite right and certainly didn't work photography wise.
I'm not one to give up easily and although I had to let it go this time, I'll work on it!

Caramelita Ice Cream Sundae with Caramel and Mascarpone Whipped Cream

Along with a few other food bloggers, Mövenpick recently set me a challenge which was to create an Ice Cream Sundae using Mövenpick ice cream and I could add any additional non-ice cream ingredients I fancied.  But I had another challenge of my own, which was to try to take photographs before it melted!


That said, this Sundae made with Mövenpick Caramelita ice cream makes for perfect eating with the lovely hot weather we're currently enjoying here in the UK.

Cherry and Chocolate Meringue Dessert

How can anyone resist a bowl of lovely cherries?  This simple dessert can be made in a flash - Meringue nests and whipped cream topped with fresh cherries and drizzled with melted chocolate.  


Did you know that tomorrow July 16th is National Cherry Day?  Cherries are so nice to eat but the pesty stone inside does make them a bit messy.  However, the new Cherry/Olive Pitter from OXO Good-Grips makes it a doddle to remove cherry stones without mess, making them so much nicer to eat and ready form some sort of dessert or make a sauce.

Here are a couple of pictures I've taken showing the Cherry Pitter in action:


Remove the stem from a cherry and pop it into the holder - stem side up.  Press down to remove the stone.  
 

The OXO Good-Grips Cherry Pitter also works on large cherries too.  Once you've finished just remove the splatter shield by twisting to clean.  Dishwasher safe but it really isn't necessary, hot sudsy water will do the trick.

Fro-Fru Frozen Fruit Dessert Maker - Review

Frozen Fruit (Fro-Fru) This refreshing pineapple sorbet was made in less than a minute (after freezing the fruit beforehand) thanks to this great little gadget 'Fro-Fru' from Judge Cookware.  
Of course you can use whatever fruit takes your fancy, bananas, strawberries, blackberries, peaches, raspberries - the list is endless.  Dairy products - milk, cream and yogurt can be used to conjure up a delicious dessert in no time at all.  Kids and adults alike will love this little machine!

Strawberries and Ice Cream Eton Mess Dessert

Now this dessert came about since I couldn't wait to try out the Strawberry Huller - new from OXO Good Grips and of course the Berry Bowl.  Perfect for summer this Eton Mess style dessert takes no time at all to make and makes perfect eating whilst watching Wimbledon! 


First things first - you need good tasty strawberries and it has to be said these strawberries; kindly sent to me from Berry World were seriously the best we've ever had.

The 'Sweet Eve' is a truly British born-and-bred strawberry. They were so, so sweet and juicy and really didn't need anything else with them.  But I was asked to make a dessert and so I did!

Yogurt Ideas - Strawberry and Marshmallow or Banana and Chocolate Chip

Strawberry and Marshmallow or Banana and Chocolate Chip - which would you choose? 
You may have seen my post 'How to Make Yogurt using the Judge Digital Yogurt Maker' which was my first attempt.  I made Summer Berry and Vanilla yogurt but if you missed it just click the link and have a quick read.  I said I'd come up with a few more ideas and since this yogurt maker is so very easy to use, I've not stopped using it since it arrived!


I made yogurt in the usual fashion following the easy to follow instructions that came with it.  As before, I used Jersey milk and Yeo Valley Natural Live Bio Yogurt as the 'yogurt starter'.  
But time I wondered what would happen if I added banana flavoured Nesquik to the prepared milk (once it had reached the cooled down to 40C stage and after mixing in the yogurt starter (live yogurt).

How to Make Yogurt using the Judge Digital Yogurt Maker

I'd wanted to make yogurt for ages but had never got round to it apart from using an EasiYo yogurt maker - more on that later.  Having recently been sent this brilliant electric yogurt maker by Judge Cookware I couldn't wait to give it a go.
If you've ever wondered about buying one then I say if you love yogurt this gadget is the very fellow for the job as it really is so easy to use.  This was my very first attempt and it worked out really well - Summer Berry Yogurt with Vanilla.

    
More about making yogurt with the EasiYo - which has to be said it is a great invention.  I really like mine but I have stopped using it as I found it to be too expensive to keep buying the powered sachets you need.

Rachel's Organic Greek Style Lemon Yogurt - Review

If you haven't discovered these already, let me share with you - Rachel’s latest addition to the Greek Style range of Organic Bio-Live Yogurts.  

The new Lemon flavour is in our opinion, totally and utterly delicious.  Having been sent 6 large tubs to try I have to tell you they've gone - yes we seem to have eaten them all. 
Seriously creamy, smooth and very lemony with just the right amount of sweetness.
