Get BBQ Ready with Iceland Foods

My sweet and slightly tangy Sweetcorn Relish is ready to top your burger in a matter of minutes; it's made from veggies straight from the freezer. The great British weather has once again tried to fool us again this week. From horrid rain and hail to brilliant sunshine and dare I say it; hot even. But the one thing we all love to do on the relatively few and sometimes far between nice sunny days is to have a BBQ.

Now that's all very well and dandy but who on earth wants to have to rush out to buy burgers and kebabs and stuff when you realise the weather forecast is actually wrong and you could have a BBQ -if only you had thought about it beforehand. After all, if you have to go out shopping for food by the time you get back you've missed the best of the sun!

So I was really pleased to have been set another Iceland Foods #PowerofFrozen challenge which was to see if I could be BBQ ready for whenever the weather was next looking good.

With my freezer stocked up with frozen and ready to cook goodies from the truly brilliant range of BBQ foods available from our local Iceland I was all set to BBQ and that day came sooner than the weatherman predicted. I'm not just saying it, pop down to your local Iceland Food store and I think you'll be pleasantly surprised of the quality upmarket range they now have.

On Thursday I'd done a day's work 6am till 2pm and the weather had turned out to be gorgeous. So without having to go shopping (it would have been too late if I'd had to do that) I conjured up this array of delicious BBQ food from Iceland.

I found out we hadn't got any briquettes in the garage needed for the BBQ - oh bother, I'm thinking (or words to that effect) please don't make me have to now pop out after all. But fear not this wasn't a problem because all the food I'd bought is not only cooked from frozen but can also be cooked in the oven too which is what I did.



Here's a photo of all the food in my freezer I had in readiness for a sunny BBQ kind of day. I already had Brioche Burger Buns which I forgot to photograph by the way. The burger buns are pre-sliced making everything so very easy.

Now that's not all folks; for my next trick I even managed to make a Sweetcorn and Pepper Burger Relish to go on the burgers; check me out! Again made from (yes you guessed it) ready prepared frozen ingredients.

Sweetcorn and Pepper Burger Relish

Made in minutes from frozen veggies; this recipe is enough for 4 servings.
prep time: 3 minscook time: 7 minstotal time: 10 mins

ingredients:

  • 2 teaspoons Vegetable oil
  • 2 cups of Iceland Frozen Quick Cook Mixed Peppers
  • 1/2 a cup of Iceland Frozen Supersweet Sweetcorn
  • 1/2 a cup of Iceland Diced Onions
  • a pinch of Sea Salt
  • 1 tablespoon Caster Sugar
  • 2 tablespoons Cider Vinegar
  • 1 heaped teaspoon Smoked Paprika

instructions

  1. Tip the frozen mixed peppers onto a plate and spread out.
  2. Add the vegetable oil to a small frying pan to heat and add the sweetcorn and onions.
  3. By now the peppers will only very slightly defrosted but enough so that they are easy to cut into small dice which takes seconds. Add the now diced peppers to the frying pan and stir.
  4. Cook whilst stirring for a few minutes until everything has defrosted and add in the sugar, cider vinegar and smoked paprika.
  5. Over a medium heat stir until piping hot. Turn the heat off and let it cool. Once cool tip into a small bowl or glass jar.

Even the Stonebaked Ciabatta loaf  is cooked from frozen so there's really no hassle at all - just pop it in the oven 10 minutes after putting in the Butternut, Sweet Potato Fig and Feta side. Once the loaf is cooked leave to cool before slicing.

Another nice side dish I spied when shopping in Iceland was the Garlic Cream Cheese Potato Rostis which were so, so good - oh yes we really liked these. The beauty of frozen food is there were only 2 of at our last minute BBQ so all I did was remove enough for us and the rest went back in the freezer, ready for the next sunny day. So buying frozen food means there's less waste.

Enough chat, here's what we had: Butternut Squash, Sweet Potato, Fig and Red Pepper & Feta oh my goodness it was delicious and priced at just £2.00 is brilliant value and extremely convenient.

The burgers are made with prime British Beef and have nothing else added apart from black pepper and onions.

  1. Through the #PowerofFrozen campaign I've really been made aware of how much Iceland has changed for the better recently. They are constantly upping their culinary game, and I have genuinely been stopping in to help with my shopping. I love your relish idea for your BBQ - very clever use of their frozen ingredients.   2. It's been really interesting to see how Iceland's range had expanded and deviltries developed in the years since I've been in one - we used to have a local branch but it closed many years ago. Good to know some of their products.

  3. I love the look of that sweetcorn relish! I do love sweetcorn, and it's just as good frozen as it is fresh in my opinion. Loving having a well stocked freezer at the moment!

  4. The #PowerOfFrozen campaign has really highlighted to me that Iceland is way more than fish fingers and frozen pizza! I hadn't spotted either the Garlic Cream Cheese Potato Rostis or the Butternut Squash, Sweet Potato, Fig and Red Pepper & Feta but will be popping both in my trolley on my next visit.
