Dutch baby or German pancakes are delicious and easy to make. With Pancake Day almost here it's time to give these a go!

Pretty much everyone loves a pancake, even me, but Paul (the husband) is a proper lover of a good pancake.

But the trouble is I'm not too keen on cooking them since he can eat a LOT of the thin crêpe like ones which means I'm standing over a frying pan for what seems like forever.

With oven cooked pancakes there's no more standing over a frying pan and flipping it over in hope that you don't ruin them. I say oven cooked pancakes are the way to go!

They're BIG and very filling so just one does the trick, even more, marvellous in my opinion. 😉

What is Pancake day?

Shrove Tuesday (also known in Commonwealth countries and Ireland as Pancake Tuesday or Pancake Day) is the day in February or March immediately preceding Ash Wednesday (the first day of Lent), which is celebrated in some countries by consuming pancakes.

How to make a Dutch Baby Pancake

It's a sort of like a large sweet Yorkshire pudding batter except you must use self raising flour or it won't puff up.

Pour the batter into a pan and watch it puff right up (it gets a bit scary) but it turns a lovely golden brown and then you know it's done.

Once cooked and you open the oven door, it will sink right back down into a random shape which I think gives it a proper homemade (or you could say rustic) look!

Drizzle with maple syrup, top with raspberries and blueberries, eat and enjoy.

Top Tip!

If you're feeding more than one greedy person or a lot of hungry kids you can make a humongous pancake in a roasting tin; as long as it's non-stick and not too deep it'll be fine.

That said, don't forget you'd have to double the ingredients listed.

Of course, you can top with strawberries and chocolate or bananas and maple syrup; whatever takes your fancy it's up to you. The dish I used for this recipe was 21 cm (8 inches round)

Can you make Gluten-Free Dutch Baby Pancakes?

Of course, you can still make my oven cooked puffed pancakes if you're gluten intolerant; just use Gluten-Free Flour which can be found in most good supermarkets.

Dutch Baby Pancake

The non-stick dish I used was 21 cm (8 inches round)
Prep time: 5 MinCook time: 12 MinTotal time: 17 Min

Ingredients

  • 70 g self-raising flour
  • 3 eggs free-range of course
  • 120 ml of milk
  • 35g melted butter - left to cool a bit
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
Topping
  • Maple syrup
  • Fresh raspberries 
  • Fresh blueberries and a  dusting of icing sugar

Instructions

Preheat your oven to 220C 425F or Gas 7
  1. In a large jug or medium-sized bowl whisk together the eggs, milk, salt, vanilla extract and sugar.
  2. Now stir in a little over half of the cooled melted butter; if it's hot it will scramble the eggs.
  3. Put the flour into another bowl and add the egg mixture a little at a time stirring until you have a lump-free batter. 
  4. Take care not to over mix.
  5. In a frying pan (that can go into the oven) or you can use a good non-stick roasting tin add the rest of the butter. 
  6. Pour in the batter and pop it straight onto the middle shelf of your oven (be sure to preheat the oven first).
  7. Set a timer for 12 minutes then without opening the oven door check that is puffed and golden; if not it should only take another couple of minutes.
  8. Remove from the oven, drizzle with maple syrup and top with raspberries and blueberries, or whatever else you fancy.
