Vegetarian Stew with Beans

An easy-to-make, vibrant vegetable stew packed full of flavour.

The addition of cannellini beans makes this a filling meal especially if served on fresh crusty bread for dipping and mopping.

Of course, you don't have to own a ThermoCook to make this recipe, but it does make it extra simple to make and really does cook stews perfectly.

All stews taste even better if reheated to following day making this the perfect quick mid-week meal or to take to work for a tasty lunch; just heat it up in a microwave.

Of course, the ThermoCook can chop everything but since we want chunks of vegetables rather than finely chopped for this recipe it's better to cut them by hand.

Ingredients to serve 2 to 4

  • 1 large onion – peeled and quartered
  • 2 cloves garlic – peeled
  • 2 sticks celery – chopped
  • 1 red bell pepper – deseeded and sliced
  • 1 courgette – sliced
  • 1 carrot – peeled and very thinly sliced
  • 1 x 400g can of tomatoes including the juice
  • 1 x Knorr vegetable stock cube (chicken if you are not vegetarian)
  • A good pinch of chilli flakes
  • 2 heaped teaspoons of sweet paprika
  • 2 teaspoons of sugar
  • A splash of Balsamic vinegar
  • Sea salt and black pepper to taste

1 x 400g tin of cannellini beans in salted water – rinsed and drained well

Method

Put the onion and garlic into the ThermoCook jug and with the chopping blade attached select CHOP for 30 seconds.

Transfer to a bowl and change the blade for the kneading shaft. If you want to avoid changing the blade then you can, of course, chop the onion and garlic by hand.

Put the onion and garlic back into the jug and add the rest of the ingredients (except the cannellini beans) including the stock cube (no added water) and the juice of the tomatoes.

Set the ThermoCook to the following:

  • STIR
  • SPEED 1 
  • TEMPERATURE 90C 
  • HEAT 5
  • TIME 30 minutes

After 30 minutes have a taste to check the seasoning and add the rinsed and drained cannellini beans.

Set the ThermoCook to the same settings above and cook for a further 10 minutes.

Vegetable stew cooking

Serve with fresh crusty bread for dipping and mopping. *ThermoCook will automatically switch WARM so you don’t have to serve straight away.

Vegetarian Stew

Of course, this can be made in a casserole dish in the oven. Chop the veggies in the usual way and put the casserole into the oven.

  6. Serve with fresh crusty bread for dipping and mopping.
  7. *ThermoCook will automatically switch WARM so you don’t have to serve straight away.

  1. That stew looks so good, I feel like I need a bowl of it right now. I haven't tried making stew or even soup yet in my ThermoCook, but I''m super impressed with the lemon curd - I made two batches.

  4. That looks like a lovely warming stew. I haven't made any chunky soups of stews in the Thermocook yet, but I also find I'm using it for something pretty much everytime I'm cooking.
