Mexican-Style Coleslaw - Easy Recipe

Add a little spice to your life with this Mexican-style coleslaw! Of course you can make it more or less spicy to suit your taste and it's ideal to serve at a BBQ or just as a change instead of regular coleslaw.

Of course if you happen to have too much time on your hands you can make your own mayonnaise but I'm afraid I don't, and in any case I say good old Hellmanns mayo is the way to go.

For the mayo mix 6 parts of good quality mayonnaise together with 1 part chipotle chilli paste and you have what I'd call a nice heat - you can go either way just add more chipotle paste for more heat.

So, there's no proper recipe since everyone wants to make a different amount of coleslaw.

Mexican-Style Coleslaw

Of course if you happen to have too much time on your hands you can make your own mayonnaise. In any case I say good old Hellmanns mayo is the way to go!

ingredients:

2 inches sliced off of a medium white cabbage then sliced into thin strips
1 small red onion - peeled and sliced thinly
1 medium sized carrot - peeled and grated
1 small red chilli - deseeded and very finely chopped
1/2 a green bell pepper - deseeded and chopped into small dice (keep a couple of slices for garnish)
a good slice of Extra matured Cheddar cheese (say 1 inch by 4 inches) - grated
6 tablespoons of Hellmann's mayonnaise
1 tablespoon of soured cream - if you don't happen to have any don't fuss, just leave it out
1 tablespoon of (Discovery brand) chipotle paste 

instructions

For the mayo mix 6 parts of good quality mayonnaise together with 1 part chipotle chilli paste and you have what I'd call a nice heat - you can go either way just add more chipotle paste for more heat.  When you're happy throw it into a medium sized bowl along with the rest of the stuff and mix. 

Have a taste and adjust the spiciness adding more chipotle paste or chilli if you fancy it. 

You shouldn't need salt but just add a small pinch of sea salt if you think it needs it. 

Give it a final mix and garnish with green pepper slices then serve straight away.

That's it - Job done!
