Oh my, this is GOOD FOOD!  An easy chicken casserole dump recipe, just dump the ingredients in the slow cooker and leave it to cook. 

A great way to eat more veg, you can literally throw pretty much any vegetables in that you have.

If you don't like mushrooms just add another carrot. Don't have any leeks? Just add another onion or another stick of celery. This is the go-to dinner that I make the most out of all of my slow cooker recipes.

Money and Time-saving Top Tips!

  • Keep an eye out in the supermarket for offers. This could be the end of day discounts for vegetables that are perfect to throw in a casserole or stew. They are usually just fine and a long way from going off.
  • The same goes for meat, you can find some serious billy bargains towards the end of the day.
  • Also, look out for 3 for 2 offers on pre-chopped vegetables. They can be a great time saver or if you just don’t like chopping up vegetables!
  • Usually, they work out expensive but they're on an offer they are sometimes cheaper, especially compared to buying the veggies separately.
  • You can add some dumplings towards the end of cooking, just put the dumplings on top and pop the lid back on. They will take about 30 minutes to cook.   
  • Hang on, you're telling me to add English Mustard; are you mental?! Yes, I can hear you now, 'why do you add hot and spicy mustard to a chicken casserole'? Well, let me tell you it seriously makes this dish, in fact, I added 2 tablespoons but I've stated just 1 tablespoon in the recipe.

And of course, it has to be Colman's English Mustard.

Gravy

Now, it's the delicious gravy that will make or break your chicken casserole, so I suggest you use Bisto Best Chicken Gravy Granules - available in any good supermarket.

Easy Slow Cooker Chicken Recipe

Prepare all the vegetables by peeling and chopping.

Throw them into the slow cooker along with the diced chicken. Add the herbs, mustard, black pepper and the bay leaf.

Salt

Do NOT be tempted to add any salt because when you add the gravy granules at the end it will be fine; otherwise, it will end up far too salty.

Now dissolve the chicken stock pot and 1 tablespoon of gravy granules in just 300ml of boiling and give it a stir and pour it into the slow cooker.

You will wonder, and perhaps worry, that there doesn't seem to be any liquid but fear not!

Cooking in a slow cooker produces more liquid 

As the chicken and vegetables cook in a slow cooker they produce liquid.

So, if you add too much now you will never be able to thicken it up at the end - well if you did, you'd probably end up using a whole jarful of gravy granules to get it thickened!

Be sure to give it a gentle but good stir then pop the lid on.

Which Slow Cooker Setting?

Set the slow cooker to HIGH 4-6 hours or LOW for 7-8

It got a bit late when I made this and so I cooked mine on high and it was nicely cooked in 5 hours.

Look at all that lovely chickeny gravy - all that's needed is a creamy mash which is what we had with it, but it got too dark to take a picture so you'll just have to imagine the mashed potato!

Slow Cooker Chicken Casserole

I think this is best served with a dollop of nice creamy mashed potato.The cook time depends on how whether you cook on low or high.
Prep time: 10 MinCook time: 5 HourTotal time: 5 H & 10 M

Ingredients

  • 2 - 3 skinless chicken breast fillets - cut into large-sized chunks
  • 2 carrots - chopped
  • 2 stalks celery - stringy bits removed and sliced
  • 1 clove garlic - finely chopped
  • 1 large onion - peeled and sliced
  • 1 leek - cleaned and sliced
  • 4 mushrooms - sliced
  • 1 heaped tbsp mustard - I used Coleman's English mustard
  • 1 tsp dried mixed herbs - I used an Italian blend
  • 1 bay leaf
  • pinch of black pepper (don't add salt) the stock and gravy will be fine
  • 1 Knorr chicken stock pot
  • Dissolve 300ml boiling water with just 1 tbs of Bisto Best Chicken gravy granules
  • *You will need more gravy granules to thicken at the end of cooking

Instructions

  1. Add all of the ingredients to the slow cooker.
  2. Dissolve the stockpot and just 1 tbs of the gravy granules in 300ml of boiling water - you add more gravy granules to thicken, at the end of cooking.
  3. Give everything a good stir to mix together.
  4. Pop the lid on the slow cooker and set it to LOW for 7 to 8 hours, or High for 4 to 6 hours, but please check your slow cooker instructions.
  5. When it's cooked nicely, remove the bay leaf and discard.
  6. Now turn the slow cooker to HIGH and stir in about 2-3 tablespoons of gravy granules but do this a little at the time, so you don't end up with gravy lumps.
  7. Leave the lid off and let it thicken for a few minutes and add more gravy granules if you think you need to.
  8. Have a taste and check the seasoning; then that's it you're all done!

Notes:

To serve 4 just add another chicken fillet.Instead of mashed potato and for less work you could add baby new potatoes - just cut them in half and throw them in at the beginning.
