Smoky Pork Sliders with Barbecue Sauce

Gordon Ramsay made these into bite sized mini burgers, I decided to make 4 big burgers instead.  However you choose to make yours is of course up to you.  Smoky from the bacon and paprika and with a sweet and sour hit from the barbecue sauce, these burgers are seriously good.

The addition of Applewood smoked Cheddar really does the trick but any smoked Cheddar will be fine.

Spicy Sausage Rice Recipe - Gordon Ramsay

It has to be said I've loved watching every minute of Gordon Ramsay's Ultimate Cookery Course on Channel 4 - fantastic recipes, fast and simple to make.  Spicy sausage, peppers, red onion, tomatoes and spring onion cooked in one pot with chicken stock white wine and rice.

Crispy Crumbed Chicken Topped with Blue Cheese and Bacon

Crispy crunchy crumbed chicken fillet topped with blue cheese and bacon - what's not to like?  If you're on a diet or not, I'm pretty sure this recipe won't do you a bit of good but it tastes nice.

So easy to do there isn't even a real recipe!  Just bash a chicken fillet between two sheet of cling film so it's nice and thin.  Why?  Because it will cook a lot quicker without drying out.
Here we go then:
First of all be sure to season the flour and the crumbs with a little salt and pepper or the chicken will taste of nothing very interesting.

Fry 2 pieces of smoked back bacon per fillet/person until nice and crisp then set aside.
Now get 3 plates in a row:

Seasoned flour on one, egg on the second and again seasoned, with salt and pepper, Panko (Japanese breadcrumbs) on the third - of course you can use ordinary breadcrumbs if you wish - but toast them lightly first so they are nice and crunchy.

Put the now thin chicken fillet first in the flour, then the egg, followed by the crumbs.
Heat a good glug of oil in a frying pan and fry each crumbed fillet for a couple of minutes each side until cooked through and golden.

Just before they are done top with sliced blue cheese (I used Dolcelatte) and put the bacon back on top - it will soon heat through.

Serve straight away with skinny chips and a side salad.

Sunvil Supper Club - Fish Stew from Paxos

I love visiting Greece and its islands although I've only visited an handful but someday I'd love to visit Paxos.  The smallest of the Ionian islands, Paxos lies just south of Corfu and is only 7 miles long and 3 miles wide.  Although Paxos is literally covered with olive trees, it also has many wooded areas that are ideal for walking, and yet Paxos has over 30 beautiful beaches to choose from too.

Fish stew from Paxos is this months recipe from the Sunvil Supper Club which they started a little while ago, designed to give you a taste of different country's cuisines.  

You can download this and other recipes, so have a look and cook yourself into the holiday mood.  I think you'll agree, Paxos certainly looks beautiful.

The fish stew with sea bream, prawns, tomatoes, celery and potatoes was delicious.  Easy to make and perfect served with some nice crusty bread.
