Ham Mushroom and Mascarpone Pasta Melt

Quick no-fuss pasta bake idea. Yummy Prosciutto ham with mushroom and mascarpone melt.

A perfect topping for some nicely cooked pasta. Yes, this is another of my Marks and Spencer copycat recipes.

Ham Mushroom and Mascarpone Pasta Melt

Now there's no real recipe to this so it's perfect for students, busy mums or indeed anyone with either no time to cook or if you just simply can't be bothered putting in too much effort.

As I was saying, there's no real recipe and even though I'm into cooking as you know but there are times when I just don't have time.

So even though I'm not a great fan of ready-made pasta sauces, I have to admit I did use them to make this.

I used Tortiglioni pasta, but feel free to use whatever pasta takes your fancy. 'Marks and Spencer' use Rigatoni which is very similar to Tortiglioni.

What is Tortiglioni pasta?


Tortiglioni is a type of pasta, similar to rigatoni but larger and with deeper grooves which spiral around the pasta. They take their name from the Latin word torquere, meaning 'to twist. A tortiglione is a characteristic design from the lathe used in pasta manufacturing, with vertical ridges.

Bake in your preheated oven (uncovered) for about 30 to 35 minutes - or until it's nice and hot in the middle and serve with some nice salad.

Ham, Mushroom and Mascarpone Pasta Melt

Prosciutto with mushroom and Mascarpone are a perfect topping for some nicely cooked pasta. Now there's no real recipe to this and it's perfect for students, mums or indeed anyone with either no time to cook.

Ingredients

You will need as much as you want of the following
  • Pasta cooked in lightly salted water (follow the packet instructions)
  • Ready-made pasta sauce - half a standard-sized jar
  • Ready-made cheese sauce (I used four-cheese sauce from M&S)
  • Sliced and fried mushrooms - I used just 2 chestnut mushrooms
  • Mascarpone cheese
  • Prosciutto (ham)
  • grated mature cheddar
  • a little olive oil for drizzling

Instructions

Preheat your oven to 200C/400F or Gas 6
  1. Get you self a suitably sized ovenproof dish, put a tiny bit of olive oil in and spread it around the dish with a piece of kitchen paper.
  2. Put a layer of cooked and drained pasta. Randomly top with a little tomato pasta sauce. 
  3. In the bits, you missed out, top with the cheese sauce.
  4. Add in the fried mushroom slices and the prosciutto here and there. Just put them wherever; be artistic!
  5. Add a few dollops of the mascarpone, then top the lot with some grated cheddar and drizzle over a tiny bit of olive oil.
  6. Bake in your preheated oven (uncovered) for about 30 to 35 minutes - or until it's nice and hot in the middle.
  7. Serve with some nice salad.
