Cheesy Vegetable Bake

A really easy traybake of peppers, onions, tomatoes, courgettes and potatoes, topped with a mixture of mozzarella and cheddar cheese.

Cooking doesn't get easier than this!

Cheese Vegetable Bake

Baked in the oven till cooked and the cheese is gooey and golden. This was a fridge clear out recipe which was so easy to do and turned into a vegetable cheesy goodness.

Disposable Foil Tray

Use a disposable foil tray like I did and it's even easier. Foil trays are recyclable as long as you give them a quick wash.

Make ahead

You could prepare all this in advance as I did but you do have to toss the potatoes in a little olive oil otherwise they will go brown and horrid.

You will need a Mandoline Slicer

Be sure to slice the potatoes very thinly, or they won't cook; it's surprising how long potatoes take to cook. So it really is best to use a mandolin slicer because you really won't be able to cut them thinly enough.

In any case, you need one of these in your life - so handy, I use mines loads!

You can buy a cheap mandolin slicer from any good cookshop and most supermarkets, or of course, over on Amazon.

Or you can go all out and buy an all singing all dancing professional mandoline slicer!

If you don't have one and still want to make this them you will do best to part cook the potatoes and let them cool before adding to the tray.

How to Make Vegetable Traybake

Lightly oil your foil tray and slice up the veg. Add it to the tray apart from the tomatoes and the potatoes.

Season with a little salt and a few red pepper flakes - they are sweet rather than hot like chilli flakes.

Now add a little cheese and then the tomatoes.

See how thin those potatoes need to be, something like 1mm thick.

Add the potatoes and season with salt - don't leave the salt out of your dish will taste bland.

Top the lot with the two kinds of cheese. Drizzle over a little olive oil and sprinkle with a little smoked paprika.

Cover tightly with non-stick kitchen foil and pop into your pre-heated oven 200c/400f or Gas 6 for 30 minutes.

Remove the foil and cook for a further 15-25 minutes until the cheese is melted and gooey and the potatoes are cooked.

What can I serve with Vegetable Bake?

Pan-fried or grilled chicken, pork or just a hunk of nice crusty bread. Or you could leave the potatoes and cheese out altogether - but reduce the cooking time and serve the veggies with rice, pasta or quinoa.

Cheesy Vegetable Bake

Use as many or few ingredients you fancy. If you leave the potatoes out you won't need to cook it for quite as long.

Ingredients

gather and prepare the following
  • Olive oil
  • Red onion - thinly sliced
  • Red and yellow bell peppers - sliced
  • Courgettes (zucchini) - sliced
  • Tomatoes - sliced
  • Potatoes - VERY thinly sliced 1mm thickness
  • Grated Cheddar cheese
  • Grated Mozzarella cheese
  • Salt to season 
  • Red pepper or chilli flakes 
  • Sweet smoked paprika

Instructions

Preheat your oven 200c/400f or Gas 6
