Forget the McDonald's McCrispy, this oven baked crispy chicken makes the best burger!

No messing about with deep-fat fryers, this recipe is easier and healthier.

Recipe top tips! 

  • Now, as all ovens vary it is almost impossible to give exact cooking times. For example, your chicken might be thicker than mine.
  • Or you might have literally just removed it from the fridge - you should always remove any meat, fish or poultry from the fridge at least 20 minutes before cooking. All of these factors will affect the cooking time.
  • So, people! I say you should always check the internal temperature to determine if it is cooked and for that reason, I highly recommend you buy a digital kitchen thermometer.
  • Personally, I'm a big fan of the Thermapen Professional Thermometer and can not function in the kitchen without it. The internal temperature of cooked chicken should be 75°C but it's best to remove it at 72°C and let it rest for a few minutes. 
  • You can buy panko crumbs in any good supermarket, or over on Amazon, or you could even use crushed cornflakes.
  • You don't have to make burgers, you can use the recipe to make the best crispy chicken and serve it with a simple salad and no bun - a naked burger!

Burger sauce ideas

  • BBQ sauce - you can, of course, use your favourite shop-bought brand, or you can be all chefy and make your own. Check out my homemade BBQ sauce recipe, and even if I do say so myself it really is the best!
  • mayo
  • mayo mixed with a little tomato ketchup
  • tomato ketchup
  • tomato relish

How to flatten chicken fillets

Take one large chicken fillet and slice it horizontally so you now have 2 fillets - to do this, just hold your hand flat and firmly on top of the fillet and using a sharp knife slice the fillet in half.

Repeat with the other fillet.

Now, put each fillet between cling film or parchment paper and lightly bash to make them even in thickness.

How to crumb chicken

To crumb, line up 3 bowls and add the following to each bowl.

Bowl 1

100g plain flour

Bowl 2

2 eggs - lightly beaten

Bowl 3

80g panko breadcrumbs 2 teaspoons sweet paprika a good pinch of salt and black pepper - and mix them all together.

Coat one at a time and first coat with the flour, then the egg and then the crumb mixture.

Press the chicken into the crumbs so they stick.

Cook the chicken

Drizzle a shallow non-stick baking tray with a bit of oil and, using a piece of kitchen paper wipe it over the tray. I like to use BacoFoil (non-stick) kitchen foil then you really don't need much oil, it's brilliant!

Put each piece of chicken onto the tray and now drizzle the top of each fillet with a little oil.

Crispy Chicken Burger

You only need 2 large chicken fillets to make 4 burgers.

Ingredients

  • a little vegetable oil - to cook
  • 4 pre-sliced burger buns
  • 2 fat chicken fillets - halved lengthways to make four fillets for 4 burgers
To crumb the chicken - line up 3 bowls and add the following
  • Bowl 1
  • 100g plain flour
  • Bowl 2
  • 2 eggs - lightly beaten
  • Bowl 3
  • 80g panko breadcrumbs
  • 2 teaspoons sweet paprika
  • a good pinch of salt and black pepper
To serve
  • lettuce - shredded
  • tomatoes - sliced
  • red onion - sliced
  • cucumber - sliced

Instructions

Prepare the chicken
  1. Take one large chicken fillet and slice it horizontally so you now have 2 fillets - just hold your hand flat and place firmly on top of the fillet and using a sharp knife slice the fillet in half.
  2. Put each fillet between cling film or parchment paper and lightly bash to make them even in thickness.
Crumb the chicken
  1. Coat one piece of chicken at a time in this order:
  2. First in the flour, then the egg followed by the crumb mixture.
  3. Press the chicken into the crumbs so they stick.
Preheat your oven 220°C/430°F
  1. It's important to preheat your oven first.
  2. Drizzle a shallow non-stick baking tray with a little oil and, using a piece of kitchen paper wipe it over the tray. I like to use BacoFoil (non-stick) kitchen foil then you really don't need much oil, it's brilliant!
  3. Put each piece of chicken onto the tray and now drizzle the top of each fillet with a little oil.
  4. Cook on the middle shelf for about 15 minutes then turn and cook for a further 5-10 minutes until the chicken is cooked through. Remember, as the chicken is quite thin, it won't take too long to cook.
To serve
  1. Put two pieces of crispy chicken onto each burger bun and top with the suggested salad or whatever else you fancy.
